Winemaking Following cold stabilisation in stainless steel, this vintage underwent a finely-tuned aromatic fermentation over the course of approximately one month, affecting the yeasts with temperature variations between 8-20ºC to realise the wine’s full aromatic potential, before alcoholic fermentation over ten days.

Grapefruit, citrus and lemon blossom with hints of elderflower, lotus and hedgerow layered over an impressive spine of refreshing acidity, this wine has a great flinty minerality from our silex vineyards and a long crisp finish – another Sauvignon Blanc that will age and develop beautifully.

Winemaking Following cold stabilisation in stainless steel, this vintage has a complex fermentation process that began at 10ºC and increased to 18ºC, over 10 days. After evaluation, the temperature was decreased to 8ºC to ‘stress’ the yeasts to maximise the aromatics. Over the course of a month, it was first increased to 18ºC and then 20ºC to finish aromatic fermentation. Alcoholic fermentation was then completed over approximately 12 days.

An exceptionally pure expression of Sauvignon Blanc, intense and aromatic with focused citrus notes, hints of exotic fruit and notes of hedgerow and wild mint. The palate is long with crisp acidity, textured minerality and hints of green tea.

A lifted and crisp sauvignon showing citrus, grapefruit notes with white peach and tropical fruit and hints of ‘tomato stalk’, wild mint and gentle herbaceous tones. The palate has great minerality and length, finished with crisp, refreshing acidity – a sauvignon blanc with great structure.

Winemaking Part whole bunch fermentation with extended skin contact to extract texture and fine tannins, fermentation takes place at low temperatures in temperature controlled stainless steel tanks to preserve the aromatics and refreshing acidity.

Vivid pink in colour, with aromas of frais de bois, cherry blossom and rose petals, violets and hints of spice. Made from 100% Gamay, the palate is dry and ‘juicy’ with lovely balance and freshness. Strawberry, red currant and spice come through on the palate along with flinty acidity and a hint of saline that refreshes the palate.
